Cooking quick and delicious recipes while on vacation.

Ground beef tacos and Cilantro-lime Rice with beans.

 


Healthy home cooked meals do not need to be complicated or bland. They do not need to take long time to make, and you can even cook a meal while you are on vacation in less than 30 minutes if you have a kitchen or a kitchenette.

Our friends loved the tacos. We even had left overs for another day!

I love vacationing. Often times we rent a home or get a place with a kitchenette.

.

Once a year my boyfriend and I travel with 2 couples. We go motorcycle riding through different states. Eating out every night may get tiring, and expensive.

Each couple picks a night to cook and the rest of the evenings we go out to eat.

This time on my night to cook I made lime-cilantro rice with black beans and ground beef tacos on corn tortillas. And yes, I travel with my own gluten free, no preservatives corn tortillas (that is the Mexican in me). I even travel with my own tortillero, that I brought back from Mexico and my own spices.

Many times, after coming back from a whole day of motorcycle riding, one can be hot and tired. But dinner doesn’t need to be complicated. Thirty minutes or less, that’s all it takes!



Ingredients


1 ½ lb. ground beef *

1 small yellow onion, diced

2 big garlic cloves, chopped fine

1 small can of diced tomatoes with chilies (low sodium if possible)

Tex-Mex or Taco seasoning

2 tsp. Avocado oil

12-15 corn tortillas


For fixings:

Shredded lettuce

8 oz sour cream

Guacamole or avocado

Queso fresco or Cotija cheese (or shredded cheese if you cannot find Mexican cheese).

Salsa


For rice:

1 ½ cup of white cooked rice**

The juice of 1 lime

¼ cup cilantro, chopped fine

2 small garlic cloves chopped fine

1 tsp. avocado oil

2 cans black beans, low sodium, if possible, drained and rinsed


*Can substitute ground beef for ground chicken or ground turkey for a leaner dish

** if you want to save time or don’t have the ingredients available, Uncle Ben’s brand has a cilantro/lime rice already cooked. Just follow the instruction the same as if you cooked your own rice.


Directions

For the rice and beans:


Follow the instructions to cook your white rice. Once cooked set aside

In a medium soup pan add the avocado oil, let it warm, add garlic.

Add the beans. Mix well

Mix the rice with the lime juice and cilantro in a separate bowl.

Add to the beans and mix well.

Turn off the stove heat.

Don’t stir much, cover the pot and remove form heat so that rice do not keep cooking.


For the beef:

Warm a big skillet, cook the diced onions, the chopped garlic for a minute or two.

Add the ground beef, stir all together. Add the seasoning.

Cook until done. Add the canned diced tomatoes and cook for a few more minutes.

Remove from heat.


Set aside in small bowls: the diced tomatoes, sour cream, salsa, guacamole or avocado, queso fresco and shredded lettuce for your guest to fix their tacos as they wish.


Putting tacos together:

Warm tortillas on a hot skillet, dry. As you heat them up, keep them warm in the tortillero.

If you do not have one, a dry clean kitchen towel will do.

Place two tortillas on a plate, scoop some beef mix and topped with the desired toppings.

Serve the rice and beans on the side.

Sprinkle some cilantro on top if you have some extra.
